  • pound kirby cucumbers 
  • teaspoons dill seed 
  • sprigs optional: dill fresh
  • cloves garlic 
  • tablespoons kosher salt 
  • small onion thinly sliced
  • 0.5 cup sugar

Directions

  1. Wash the cucumbers and quarter lengthwise.
  2. Place a colander in a sink.
  3. Add the cucumbers, sprinkle with the salt, and toss to coat.
  4. Let stand for 1 hour. Rinse the cucumbers and pat dry.
  5. Place 1 cup of water, the sugar, dill seed, onion, and garlic in a large saucepan over medium heat. Stir until the sugar dissolves.
  6. Add the cucumbers and fresh dill and bring to a boil. Reduce heat to medium-low and simmer for 20 minutes.
  7. Remove from heat.
  8. Transfer to a serving bowl and let cool. Cover and refrigerate for at least 3 hours.
