  • medium florida fingerling potatoes mixed unpeeled ( colors)
  • servings herbs fresh
  • servings garlic 
  • tablespoon olive oil 
  • servings sea salt and ground pepper fresh to taste
  • servings spice mix dried your favorite (Greek, Cajun, BBQ)

Directions

  1. Preheat your oven to 425°F.Rinse and dry the potatoes, then slice the potatoes as thinly as possible with a mandolin.Rinse the sliced potatoes several times with warm water; lightly squeeze and dry them completely.
  2. Put the sliced potatoes in a large bowl and toss them with the olive oil to evenly coat.Lightly grease a cookie sheet.
  3. Lay the sliced potatoes in a single layer on cookie sheet.
  4. Bake the potatoes for 15 to 20 minutes or until golden brown and crispy.
  5. Let the chips cool for just a few minutes, then use a thin spatula to transfer the chips to a large bowl where you toss them with salt, pepper, and your choice of seasonings, if desired.
