  • cups cup heavy whipping cream 
  • tablespoons honey divided
  • tablespoons juice of lemon fresh divided
  • strips lemon zest 
  • 0.3 cup rum light
  • tablespoons sugar 
  • 0.5  vanilla pod split

Directions

  1. Place ramekins on a rimmed baking sheet.
  2. Heat cream, 2 tablespoons honey, and sugar in asmall saucepan over medium heat until justbeginning to simmer. Scrape in seeds fromvanilla bean; add bean.
  3. Add lemon peel; removefrom heat.
  4. Let steep for 5 minutes (creamshould register about 160°F on an instant-readthermometer).
  5. Remove vanilla bean and peel.Gently stir in 5 tablespoons lemon juice.
  6. Divide custard among ramekins and chill tolet set for at least 1 hour or, covered, up to 1 day.
  7. Whisk remaining 2 tablespoons honey and 1 tablespoonlemon juice with rum in a small bowl. Stir infruit; let sit until juicy, about 1 hour.
  8. Serve withcustard.
