  • tablespoons juice of lime fresh
  • cups plantains frozen sliced
  • 0.3 teaspoon salt

Directions

  1. Preheat oven to 37
  2. Place plantains in a large saucepan; add water to just cover. Bring to a boil. Cook 5 minutes or until tender; drain and transfer to large bowl. Stir in pumpkinseed kernels, honey, and salt.
  3. Spread mixture on baking pan lined with foil and coated with cooking spray.
  4. Bake at 375 for 15 minutes, turning once.
  5. Drizzle with juice.
