- 4 ounces canadian bacon cut into 1-inch pieces
- 15.8 ounce black-eyed peas undrained canned
- 16 ounce prewashed collard greens chopped ( 5 cups)
- 0.3 teaspoon pepper red crushed
- 2 cups chicken broth fat-free reduced-sodium
- 2 garlic cloves minced
- 2 jalapeño peppers seeded finely chopped
- 1.3 cups onion finely chopped ( 1 medium)
- 1 cup rice long-grain uncooked
- 0.3 teaspoon salt
- 0.5 cup water

- Coat a Dutch oven with cooking spray; place over medium heat until hot.
- Add Canadian bacon and onion; cook 4 minutes, stirring constantly.
- Add jalapeo peppers and garlic; cook 3 minutes.
- Add chicken broth and next 5 ingredients; cover, reduce heat, and simmer 15 minutes.
- Add peas, and simmer 10 minutes or until liquid is absorbed.
- Serve with hot pepper sauce, if desired.
