  • 0.5 teaspoon pepper black freshly ground
  • ounce water chestnuts drained sliced chopped canned
  • teaspoons dijon mustard 
  • tablespoons parsley fresh finely chopped
  • 0.3 cup spring onion chopped
  • tablespoons juice of lemon fresh
  • 0.5 cup mayonnaise low-fat
  • 0.3 cup cream sour reduced-fat
  • ounces potato chips crushed
  • 0.3 cup bell pepper red chopped
  • cups chicken breast boneless skinless chopped ( 4 breasts)
  • 0.5 teaspoon salt 
  • ounces swiss cheese shredded

Directions

  1. Preheat oven to 40
  2. Combine chicken and next 4 ingredients (through water chestnuts) in a large bowl; stir well.
  3. Combine low-fat mayonnaise and next 5 ingredients (through black pepper) in a small bowl, stirring with a whisk.
  4. Add mayonnaise mixture to chicken mixture; stir well to combine. Spoon chicken mixture into an 11 x 7-inch baking dish coated with cooking spray, and sprinkle with cheese. Top cheese evenly with chips.
  5. Bake at 400 for 13 minutes or until filling is bubbly and chips are golden.
