Ingredients

  • cups cabbage coarsely chopped
  • teaspoon celery seed 
  • 12  bell peppers green chopped
  • 10  tomatoes green chopped
  • tablespoons mustard seed 
  • cups onions chopped
  • 0.5 cup salt 
  • cups sugar 
  • 1.5 teaspoons turmeric 
  • cups water cold
  • cups vinegar white

Directions

  1. Place onions, cabbage, bell peppers, and tomatoes in a food processor, and pulse until finely minced.
  2. Drain, and remove contents to a large bowl.
  3. Sprinkle with salt, cover, and let stand overnight.
  4. Pour contents into a colander; rinse, and drain. Return contents to bowl.
  5. In a separate bowl, stir together mustard seed, celery seed, turmeric, sugar, white vinegar, and water.
  6. Pour over vegetable mixture, and stir to combine.
  7. Pour mixture into a large pot, and bring to a boil over high heat. Boil for 5 to 10 minutes. Store, refrigerated, in sterilized, sealed pint jars.
