Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • teaspoon caraway seeds 
  •  bacon crumbled cooked
  • 0.5 cup less-sodium chicken broth fat-free
  • 0.5 cup parsley fresh minced
  • 0.5 cup onion red finely chopped
  • pounds potatoes red
  • 0.5 teaspoon salt 
  • ounces turkey kielbasa diced
  • tablespoons citrus champagne vinegar divided

Directions

  1. Place potatoes in a saucepan, and cover with water. Bring to a boil. Reduce heat, and simmer 10 minutes or until tender.
  2. Drain; cool slightly.
  3. Cut potatoes in half lengthwise; cut halves crosswise into 1/4-inch-thick slices.
  4. Place potatoes in a large bowl; sprinkle with 2 tablespoons vinegar.
  5. Heat a large nonstick skillet coated with cooking spray over medium heat.
  6. Add onion and kielbasa to pan; cook 3 minutes or until onion is tender.
  7. Add 1/4cup vinegar, broth, and bacon. Bring to a boil; cook 1 minute. Stir in caraway seeds, salt, and pepper.
  8. Pour vinegar mixture over potato slices; toss gently.
  9. Sprinkle with parsley.
  10. Serve immediately.
