Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring potatoes to a boil in a large pot of salted water. Reduce heat to medium-low and simmer until tender, about 20 minutes.
  3. Drain; transfer potatoes to a large baking dish.
  4. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes.
  5. Drain the bacon slices on paper towels; crumble and sprinkle over potatoes.
  6. Heat a skillet over medium heat; cook and stir celery and green onion until celery is tender, about 5 minutes.
  7. Transfer vegetables to baking dish.
  8. Whisk mayonnaise, vinegar, sugar, mustard, salt, and black pepper in a bowl until smooth.
  9. Pour mixture over potatoes and stir until well mixed.
  10. Sprinkle with Cheddar cheese.
  11. Bake in preheated oven until cheese is melted, 20 to 35 minutes.
