Ingredients

  •  banana peppers green
  •  banana peppers yellow
  • 15 servings garnish: basil sprig fresh
  • tablespoon basil fresh chopped
  • tablespoon parsley fresh chopped
  • teaspoon rosemary fresh chopped
  •  garlic cloves minced
  •  jalapeño peppers 
  • tablespoon juice of lemon 
  • 0.5 cup olive oil 
  • teaspoon oregano fresh chopped
  • 0.5 teaspoon pepper 
  • teaspoon salt 
  • large to 5 tomatoes

Directions

  1. Remove and discard seeds from peppers and tomatoes. Dice peppers and tomatoes; place in a large bowl. Toss in garlic, herbs, and, if desired, cheese.
  2. Stir together oil, next 3 ingredients, and, if desired, sugar; add to tomato mixture, tossing to coat. Cover and chill 2 to 4 hours.
  3. Serve with a slotted spoon.
  4. Garnish, if desired.
