  • 28 ounce canned tomatoes whole undrained coarsely chopped canned
  • 0.3 teaspoon pepper red crushed
  • 0.3 teaspoon cumin seeds crushed
  • 0.3 teaspoon basil dried
  • 0.3 teaspoon thyme leaves dried
  • cup cooking wine dry red
  • 0.5 cup parsley fresh chopped
  •  garlic cloves minced
  • cup bell pepper green chopped
  • tablespoons olive oil 
  • cups onion vertically sliced
  • tablespoon red wine vinegar 
  • teaspoon salt 
  • 0.5 teaspoon sugar 
  • cup water

Directions

  1. Heat oil in a large Dutch oven over medium heat.
  2. Add onion, bell pepper, and garlic; saute 7 minutes or until tender. Stir in water and remaining ingredients, and bring to a boil. Reduce heat, and simmer, uncovered, until reduced to about 6 cups (about 1 1/2 hours).
