Ingredients

  • pound bay scallops 
  • teaspoon optional: dill fresh chopped
  • tablespoons parsley fresh minced
  • tablespoons green onions sliced
  • tablespoons juice of lime 
  • teaspoons juice of lime 
  • 0.3 cup mayonnaise 
  • cups salad greens mixed
  • 0.3 cup torn watercress 
  • servings garnish: watercress sprigs fresh

Equipment

  • steamer basket

Directions

  1. Arrange scallops in a steamer basket over boiling water. Cover, and steam 5 to 7 minutes or until done.
  2. Place in a shallow dish; drizzle with lime juice. Cover and chill.
  3. Process watercress and next 5 ingredients in a food processor or blender until smooth; chill.
  4. Arrange mixed salad greens on individual serving plates; top evenly with scallops and watercress mixture.
  5. NOTE: Our test kitchen staff liked the watercress mixture so much, they recommed doubling it.
