  • 1.5 cups corn whole
  • medium spring onion chopped
  • 15 oz black beans rinsed drained canned
  • 0.3 cup cheddar cheese shredded
  • 0.5 cup salsa thick
  • 0.5 cup milk 
  •  eggs 
  • serving salsa thick
  • 0.5 cup frangelico

Directions

  1. Heat oven to 400°F. Grease 9-inch pie plate.
  2. Layer corn, onions and beans in pie plate.
  3. Sprinkle with cheese.
  4. Stir Bisquick mix, milk, 1/2 cup salsa and the eggs until blended.
  5. Pour into pie plate.
  6. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes.
  7. Serve with salsa.
