  • cups rice long-grain hot cooked
  • 0.5 teaspoon curry powder 
  • teaspoon ground ginger 
  • 0.5  jalapeno minced seeded
  • cup coconut milk light
  • 0.8 cup onion finely chopped
  • 0.5 cup peas green frozen
  • 0.5 teaspoon salt 
  • 1.3 pounds shrimp deveined peeled
  • 0.5 teaspoon sugar

Directions

  1. Heat a large nonstick skillet over medium- high heat.
  2. Add onion and jalapeo pepper. Coat vegetables with cooking spray; saut 4 minutes.
  3. Add shrimp, ginger, and curry powder; saut 3 minutes.
  4. Add coconut milk and next 3 ingredients. Bring to a boil; reduce heat, and simmer, uncovered, 3 minutes or until shrimp are done.
  5. Serve over rice.
