Ingredients

  • 2 cups brown rice uncooked
  • 28 ounce canned tomatoes diced with juice canned
  • 0.1 teaspoon cayenne pepper 
  • 3 tablespoons ginger root fresh grated
  • 4 cloves garlic minced
  • 1 tablespoon olive oil 
  • 1 cup chunky natural peanut butter 
  • 6 cups water 
  • 1 large onion white chopped

Directions

  1. Place rice and water in a large saucepan and bring to a boil. Cover, and reduce heat to low. Simmer until rice is tender and water has absorbed, about 30 minutes.
  2. Heat olive oil in a large saucepan over medium-low heat.
  3. Add onion, and cook until soft and golden, stirring frequently.
  4. Add garlic and ginger, and cook until fragrant, about 5 minutes. Stir in tomatoes, and season with cayenne pepper. Increase heat to medium, and bring to a gentle simmer. Stir in peanut butter and heat through. The mixture will thicken.
  5. Serve over rice.
