- 2 teaspoons ginger fresh minced

- 6 garlic cloves chopped

- 0.5 teaspoon ground coriander
- 1 teaspoon kosher salt
- 2 tablespoons olive oil
- 1 medium onion chopped
- 1 cup greek yogurt plain low-fat
- 2 pounds spinach leaves chopped
- 0.5 teaspoon turmeric

- In a 6- to 8-qt. pot, cook onion in oil over medium heat until softened, about 10 minutes.
- Add garlic and cook 2 minutes.
