Ingredients

  •  tomatoes whole canned drained
  • cups rice hot cooked
  • 0.3 teaspoon cumin 
  • 0.3 teaspoon garam masala 
  •  garlic cloves 
  • 0.5 inch ginger peeled chopped
  • 0.3 teaspoon ground coriander 
  • 0.5 teaspoon ground pepper red
  • 0.3 cup juice of lemon 
  • tablespoon olive oil 
  • 0.5 cup peach preserves 
  • teaspoon salt 
  • 24 ounce chicken breast halves boneless skinless
  • cup water

Directions

  1. Combine first 10 ingredients in a food processor; process until smooth.
  2. Combine preserves mixture and chicken in a zip-top plastic bag. Seal and marinate in refrigerator 2 hours, turning the bag occasionally.
  3. Preheat grill.
  4. Remove chicken from bag; reserve marinade.
  5. Sprinkle chicken evenly with salt; place chicken on grill rack coated with cooking spray. Grill 6 minutes on each side or until chicken is done.
  6. Combine the reserved sauce and 1 cup water in a medium saucepan over medium-high heat; bring to a boil. Reduce heat, and simmer until reduced to 3/4 cup (about 8 minutes).
  7. Serve sauce over chicken and rice.
