  • cups baby spinach leaves rinsed
  • 0.5 teaspoon basil dried
  • cups corn kernels fresh frozen thawed cooked
  • 0.3 cup parsley fresh chopped
  • clove garlic minced pressed
  • 0.5 lb bell pepper green stemmed seeded chopped
  • 0.5 teaspoon coarse-ground pepper 
  • 0.3 cup red wine vinegar 
  • tablespoon salad oil 
  • servings salt 
  • cup onion sweet rinsed drained chopped (such as Maui or Walla Walla)
  •  firm-ripe tomatoes cored rinsed chopped

Directions

  1. In a large bowl, mix vinegar, oil, pepper, basil, and garlic.
  2. Add corn, tomatoes, onion, bell pepper, and parsley.
  3. Mix well. If desired, cover and chill up to 4 hours.
  4. Add salt to taste.
  5. Line a wide bowl with spinach.
  6. Pour corn salad into bowl; mix.
