Ingredients

  • tablespoons creamy peanut butter reduced-fat
  • cloves garlic minced
  • tablespoons soya sauce low-sodium
  • 0.3 cup pineapple preserves 
  • pound pork tenderloin 
  • teaspoon pepper dried red crushed

Equipment

  • roasting pan
  • kitchen thermometer

Directions

  1. Trim fat from tenderloin.
  2. Combine soy sauce and next 3 ingredients, stirring well.
  3. Spread soy sauce mixture over tenderloin.
  4. Place on a rack in a roasting pan coated with cooking spray. Insert meat thermometer into thickest part of tenderloin, if desired.
  5. Bake, uncovered, at 375 for 30 minutes.
  6. Brush tenderloin with preserves.
  7. Bake 10 additional minutes or until meat thermometer registers 160, basting often with preserves.
  8. Let stand 10 minutes before slicing.
