Ingredients

  • pinch pepper black freshly ground
  • 0.5 teaspoon cayenne pepper 
  • cups chicken stock see 
  • cloves garlic minced
  • teaspoon ground nutmeg 
  • teaspoon hungarian paprika sweet
  •  leeks chopped
  • 4.5 cups milk 
  • 0.5 cup olive oil 
  •  onion chopped
  • pounds pumpkin diced peeled seeded

Equipment

Directions

  1. Halve the pumpkin and scrape out the seeds and pith.
  2. Cut into 1 inch pieces.
  3. In a large skillet, saute the pumpkin, leeks, onion and garlic in olive oil.
  4. Add chicken stock and bring to a simmer.
  5. Strain vegetables, place in food processor and blend until smooth.
  6. Transfer puree to pot or crock pot; add enough milk to reach smooth consistency.
  7. Add the cayenne pepper, paprika, ground pepper and nutmeg; simmer for 30 minutes and do not allow to boil.
