  • cup bell pepper strips green
  • 0.3 teaspoon pepper black
  • 0.5 teaspoon bottled garlic minced
  • 15.5 ounce chickpeas drained canned
  • 14.5 ounce canned tomatoes diced with basil, garlic, and oregano, undrained canned
  • pound chicken breast tenders 
  • tablespoon olive oil 
  • 1.3 cups onion sliced
  • 0.3 teaspoon salt

Directions

  1. Sprinkle chicken with salt and pepper.
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Add chicken to pan; cook 2 minutes on each side or until browned.
  4. Add onion and bell pepper; saut 4 minutes. Reduce heat to medium.
  5. Add garlic, chickpeas, and tomatoes; cover and cook 8 minutes or until thoroughly heated.
  6. Garnish with parsley leaves, if desired.
