  • 0.3 cup capers drained
  • 15  cornichons (scant)
  • 1.5 cups olive oil extra-virgin
  • cups parsley leaves fresh italian packed () (from 2 large bunches)
  • servings sea salt fine
  • 12  sandwich bread white
  • tablespoons citrus champagne vinegar

  1. Place bread slices in medium bowl.
  2. Pour vinegar over and let stand until bread softens, about 15 minutes.
  3. Transfer bread mixture to processor; add next 5 ingredients and process until almost smooth.
  4. Transfer salsa to medium bowl. Season with sea salt and freshly ground black pepper. DO AHEAD Can be made 1 day ahead. Cover; refrigerate.
  5. Let stand at room temperature 1 hour; rewhisk before using.
