Ingredients

  • cups beef broth 
  • ounce tomato sauce canned
  • cup carrots thinly sliced
  • 0.5 tablespoon basil leaves fresh packed
  • tablespoons parsley fresh chopped
  • cloves garlic minced
  • pound sausage sweet italian
  • cup onion chopped
  • 0.5 teaspoon oregano dried
  • ounces tortellini pasta fresh
  • 0.5 cup red wine 
  • large tomatoes peeled seeded chopped
  • 0.5 cup water 
  • 1.5 cups zucchini sliced

Directions

  1. In a 5 quart Dutch oven, brown sausage.
  2. Remove sausage and drain, reserving 1 tablespoon of the drippings.
  3. Saute onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.
  4. Skim fat from the soup. Stir in zucchini and parsley. Simmer covered for 30 minutes.
  5. Add tortellini during the last 10 minutes.
  6. Sprinkle with Parmesan cheese on top of each serving.
