Ingredients

  • 28 ounce canned tomatoes whole with liquid, chopped peeled canned
  • cups chicken broth 
  • teaspoons basil dried
  • 0.5 cup parsley fresh chopped
  • teaspoons garlic chopped
  •  bell pepper green chopped
  • 24 ounce sausage sweet italian
  •  onion chopped
  • 0.5 pound orzo pasta dried
  • servings parmesan cheese freshly grated to taste
  • 10 ounce pkt spinach frozen dry thawed chopped

Directions

  1. Place the sausage in a large skillet over medium heat, and cook until evenly brown.
  2. Remove from skillet, and crumble into a large pot.
  3. Add bell pepper, onion, garlic, and tomatoes with their liquid. Stir in parsley, basil, and chicken broth. Cover, place over medium heat, and bring to a boil. Reduce heat to low, and cook for 30 minutes.
  4. Stir orzo pasta and spinach into the pot. Continue cooking soup 10 minutes, or until pasta is al dente.
  5. Serve topped with Parmesan cheese.
