  • teaspoon pepper black freshly ground
  • 14.5 ounce canned tomatoes diced undrained canned
  • 0.5 teaspoon thyme leaves dried
  • cups less-sodium chicken broth fat-free
  • tablespoons parsley fresh chopped
  • tablespoon garlic minced
  • 0.3 teaspoon garlic salt 
  • tablespoon olive oil 
  • cup onion chopped
  • 0.5 teaspoon onion powder 
  • teaspoon oregano dried
  • teaspoon paprika 
  • 0.5 teaspoon pepper sauce hot
  • cup bell pepper red chopped
  • 0.5 pound shrimp deveined peeled
  • tablespoon tomato paste 
  • 0.8 cup water 
  • cup rice long-grain white uncooked

Directions

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. Add chopped onion, chopped bell pepper, minced garlic, and sausage; saut 5 minutes or until vegetables are tender.
  3. Add rice and the next 7 ingredients (through bay leaf); cook 2 minutes.
  4. Add broth, water, tomato paste, hot pepper sauce, and diced tomatoes; bring to a boil. Cover, reduce heat, and simmer 20 minutes.
  5. Add shrimp; cook 5 minutes.
  6. Let stand 5 minutes. Discard bay leaf. Stir in parsley.
