Ingredients

  • 10 ounce bell peppers and onions green frozen
  • 15 ounce black beans undrained canned
  • 10 ounce enchilada sauce canned
  • tablespoons vegetable oil 
  • cup rice white uncooked

Equipment

Directions

  1. In a saucepan bring 2 cups water to a boil.
  2. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  3. Meanwhile, heat oil in a large skillet over medium heat.
  4. Saute peppers and onions until tender. Stir in beans and enchilada sauce; simmer 15 minutes.
  5. Serve over cooked rice.
