  • inch center-cut beef tenderloin 
  • 0.3 cup cilantro leaves packed
  • teaspoons jerk seasoning paste 
  • tablespoons cocktail onions rinsed
  • 24  plantain chips store-bought
  • tablespoon vegetable oil

Directions

  1. Quarter beef lengthwise and pat dry. Season with 1/4 teaspoon salt and rub jerk paste all over beef.
  2. Heat oil in a medium nonstick skillet over medium-high heat until it shimmers.

  4. Let rest on a cutting board 5 minutes.
  5. Cut crosswise into 1/2-inch-thick slices.
