Ingredients

  • teaspoons allspice 
  • 0.3 teaspoon pepper black freshly ground
  •  habanero chiles stemmed seeded coarsely chopped
  • tablespoon brown sugar dark packed ()
  • tablespoon ginger fresh minced peeled
  • tablespoons thyme leaves fresh
  •  garlic cloves roughly chopped
  • teaspoon kosher salt plus more
  • 0.3 cup juice of lime fresh
  •  scallions coarsely chopped
  • tablespoons vegetable oil divided
  • tablespoons distilled vinegar white

Directions

  1. Purée 4 tablespoons oil and the next 10 ingredients in a food processor until smooth.
  2. Whisk in vinegar and remaining 2 tablespoons oil and season to taste with salt. Refrigerate sauce. Put meat in a glass, stainless-steel, or ceramic dish. Toss with remaining marinade. Cover and chill for at least 3 hours or overnight.
  3. Remove meat from marinade, pat dry, and grill.
  4. Spoon reserved sauce over grilled meat.
