  • fillet anchovy packed in oil, drained, finely chopped
  • tablespoons capers drained chopped
  • 0.5 cup parsley fresh chopped
  •  garlic clove finely grated
  • pounds sunchokes unpeeled cut into 1 1/2" pieces (also called sunchokes)
  • servings pepper freshly ground
  • 0.5 cup olive oil divided
  • 0.5 teaspoons pepper red crushed
  • tablespoon red wine vinegar
