  • tablespoons red wine vinegar 
  • tablespoons vegetable oil 
  • teaspoon sugar 
  • 0.5 teaspoon ground cumin 
  • 1.5 teaspoons oregano dried fresh chopped
  • 0.3 teaspoon salt 
  • clove garlic crushed
  • medium zucchini cut into 1 1/2x1/4x1/4-inch strips
  • medium bell pepper red cut into 1 1/2x1/4-inch strips
  • 0.5 small jicama peeled cut into 1 1/2x1/4x1/4-inch strips
  •  romaine leaves

  1. In small jar with tight-fitting lid, shake dressing ingredients.
  2. In large bowl, mix zucchini, bell pepper and jicama.
  3. Pour dressing over mixture; stir gently.
