Ingredients

  • 1.5 teaspoons chives fresh chopped
  • 0.5 teaspoon garlic minced
  • 0.8 teaspoon kosher salt 
  • tablespoons key lime juice fresh
  • 0.5 teaspoon lime zest 
  • tablespoons shallots finely chopped
  • cup butter unsalted chilled cut into small pieces
  • tablespoons whipping cream 
  • 0.3 cup white wine 
  • teaspoons citrus champagne vinegar

Directions

  1. Combine first 5 ingredients in a small skillet; cook over medium heat until reduced to 3 tablespoons. Stir in whipping cream, and cook until reduced to 3 tablespoons.
  2. Reduce heat to medium-low; add butter, 1 tablespoon at a time, stirring until butter melts.
  3. Remove from heat; strain through a metal sieve. Stir in lime zest and salt. Keep warm. Stir in chives just before serving.
