Ingredients

  • slices oscar mayer butcher hickory bacon smoked thick cut cut into 1/2-inch pieces
  • cups rice long-grain white cooked
  •  eggs beaten
  • cup mild kimchi drained chopped
  •  onion chopped
  • cup peas frozen
  • Tbsp lite soy sauce 

Equipment

  • frying pan
  • paper towels
  • slotted spoon

Directions

  1. Cook and stir bacon in large skillet on medium-high heat until crisp.
  2. Remove bacon from skillet with slotted spoon, reserving 1 Tbsp. drippings in skillet.
  3. Drain bacon on paper towels.
  4. Add onions to reserved drippings; cook and stir 3 min. or until crisp-tender.
  5. Stir in rice, peas and kimchee; cook 5 min. or until heated through, stirring occasionally.
  6. Add bacon and soy sauce; mix well.
  7. Spoon rice mixture to one side of skillet.
  8. Add eggs to other side; cook 1 min. until set, stirring occasionally.
  9. Combine eggs with remaining ingredients in skillet.
