  • 24 oz cranberries frozen thawed
  • tablespoons ginger fresh peeled finely chopped
  • 1.5 cups kumquats trimmed quartered
  • 0.3 teaspoon salt 
  • 1.3 cups sugar 
  • cup water 
  •  star anise whole

Directions

  1. Stir together all ingredients in a 4-quart heavy saucepan and simmer, uncovered, stirring occasionally, until berries have burst, 10 to 12 minutes.
  2. Remove star anise and cool completely.
  3. • Compote can be made 1 week ahead and chilled, covered.
