  • 0.3 teaspoon pepper black freshly ground
  • 0.8 cup cilantro leaves fresh chopped
  • 0.3 teaspoon ground cumin 
  •  jalapeno seeded finely chopped
  • 0.3 teaspoon kosher salt 
  • 1.5 pound french-cut lamb rack of trimmed (8 ribs)
  • tablespoon juice of lemon fresh
  • 0.5 teaspoon lemon rind grated
  • teaspoon olive oil extra-virgin
  • teaspoons olive oil extra-virgin
  • cup onion finely chopped

Directions

  1. Preheat oven to 40
  2. Combine first 3 ingredients.
  3. Heat a large ovenproof skillet over medium-high heat. Coat pan with cooking spray.
  4. Sprinkle lamb with 1/4 teaspoon salt and black pepper.
  5. Add lamb to pan; cook 2 minutes on each side.
  6. Spread oil mixture over lamb; place pan in oven.
  7. Bake at 400 for 15 minutes or until a thermometer registers 13
  8. Remove lamb from pan; let stand 8 minutes.
  9. Cut into chops.
  10. Heat a skillet over medium-high heat. Coat pan with cooking spray.
  11. Add onion and jalapeo; saut 5 minutes.
  12. Combine onion mixture, cilantro, and the remaining ingredients.
