  • tablespoon cilantro leaves fresh chopped
  • tablespoons flat-leaf parsley fresh chopped
  •  garlic clove minced
  • 0.1 teaspoon ground cinnamon 
  • 0.3 teaspoon ground coriander 
  • 0.5 teaspoon ground cumin 
  • ounce lamb loin chops trimmed
  • teaspoons lemon rind grated
  • tablespoons pistachios finely chopped
  • 0.1 teaspoon salt 
  • 0.5 teaspoon salt

Directions

  1. Heat a large nonstick skillet over medium-high heat.
  2. Combine first 5 ingredients; sprinkle evenly over both sides of lamb. Coat pan with cooking spray.
  3. Add lamb to pan; cook 4 minutes on each side or until desired degree of doneness.
  4. While lamb cooks, combine pistachios and the remaining ingredients; sprinkle over lamb.
