Suggestions

If you’re looking for a dish that feels indulgent yet vibrant, these lamb cutlets with chili and black olives are a perfect choice. Ready in just 40 minutes, they bring together the rich succulence of lamb rib chops with the bold kick of chili and the briny depth of olives. It’s a recipe that balances rustic flavors with a touch of Mediterranean brightness, thanks to the lemon zest and juice that lift the entire dish.

What makes this recipe especially appealing is its simplicity. With just a handful of ingredients, you can create a main course that feels restaurant-worthy but is completely achievable at home. The marinade infuses the lamb with garlic, oregano, and citrus, while the quick pan-fry ensures a beautiful golden crust. Adding the marinade back into the pan creates a flavorful sauce that keeps the meat juicy and aromatic.

It’s also a versatile dish: naturally gluten-free and dairy-free, making it suitable for a variety of dietary needs. Whether you serve it for a cozy family dinner or as the centerpiece of a dinner party, these lamb cutlets are guaranteed to impress. Pair them with a crisp salad or roasted vegetables, and you’ll have a meal that’s hearty, satisfying, and full of character. This is the kind of recipe that proves great cooking doesn’t need to be complicated—it just needs bold flavors and a little love in the pan.

Ingredients

  • 15  olives black pitted sliced
  •  long chile red deseeded finely chopped
  • teaspoon chili flakes
  • cloves garlic peeled sliced
  • teaspoon maldon salt/kosher salt or
  • 12  lamb rib chops
  • small lemon zest juiced
  • tablespoons olive oil for frying
  • teaspoon oregano dried

Equipment

  • frying pan
  • plastic wrap
  • rolling pin

Directions

  1. Layer the rib chops between clingfilm/cling-wrap (plastic wrap) and flatten them gently with a rolling pin or mallet.
  2. Place the chops in a large dish so that they all fit in a single layer.
  3. Pour over the 4 tablespoons/1/4 cup of oil and add the garlic, chili, oregano, lemon zest and juice.
  4. Sprinkle over the salt and the olives and then turn the rib chops in the marinade so that both sides are coated.
  5. Cover and leave the lamb to marinate for 20 minutes at room temperature before cooking.
  6. Heat a large frying pan with the 2 tablespoons of oil, and add the chops scraping off the marinade before you put them in the pan. Fry them for a couple of minutes a side on quite a high heat so that they take on some color.
  7. Turn the heat back down to medium and pour the marinade into the pan over the colored chops.
  8. Add 2 tablespoons or so of water so that they cook in a little liquid.
  9. Cook for about 5 minutes for rare cutlets or a little longer if you like your lamb well cooked, (this will also depend on the thickness of the chops).
  10. Transfer the lamb to a serving plate, pour over the juices from the pan and sprinkle with the chopped red chile should you feel like enhancing the dried chili with the pep of fresh.
