Ingredients

  • 0.5 cup canola oil 
  • 0.3 cup red wine vinegar 
  • tablespoons juice of lemon 
  • teaspoon salt 
  • 0.3 teaspoon pepper 
  • clove garlic finely chopped
  • bag lettuce 
  • cups tomatoes diced
  • cups cucumber diced
  • cup bell pepper green chopped
  • 0.5 cup onion red finely chopped
  •  hardboiled eggs chopped
  • cup croutons

Directions

  1. In tightly covered container, shake all vinaigrette ingredients until well blended.
  2. In large glass bowl, layer lettuce, tomatoes, cucumbers, bell pepper and onion.
  3. Pour vinaigrette over top. Cover and refrigerate 1 to 2 hours to blend flavors.
  4. Sprinkle eggs and croutons over salad. Toss before serving.
