Ingredients

  • 15 ounce black beans rinsed drained canned
  • 10 servings garnish: cilantro leaves fresh
  • 0.3 cup cilantro leaves fresh chopped
  • 0.5 cup juice of lime 
  • 0.5 cup olive oil 
  • ounce olives ripe drained sliced canned
  • 0.5 teaspoon pepper 
  •  plum tomatoes chopped
  • small purple onion chopped
  • 16 ounce romaine lettuce shredded
  • 0.5 teaspoon salt 
  • ounce mexican 4-cheese blend shredded
  • 0.5 cup cup heavy whipping cream sour
  • teaspoon sugar 
  • cups tortilla chips crushed
  • 15 ounce kernel corn whole with red and green peppers, drained canned

Directions

  1. Process first 7 ingredients in a blender or food processor until smooth, stopping to scrape down sides.
  2. Layer lettuce and next 7 ingredients in a 3-quart glass bowl.
  3. Pour vinaigrette over salad just before serving, and gently toss.
  4. Garnish, if desired, and serve immediately.
