  • 0.3 teaspoon ground pepper 
  • 1.5 cup monterrey jack cheese grated
  • 0.5 teaspoon paprika 
  •  to 2 chilies slit whole green peeled seeded
  • servings salt and pepper black to taste

Directions

  1. Preheat oven to 325 degrees.
  2. Mix together eggs, milk, salt, pepper, paprika and cayenne.
  3. Cut chilies in half and add a single layer of chilies on the bottom of a 9 x 13-inch baking dish.Top chilies with half the grated cheese.Repeat with another layer of chilies and another layer of cheese.
  4. Pour egg mixture all over the top.
  5. Place into a larger baking dish or rimmed baking sheet.
  6. Pour in 1/2 inch of water and bake for 35 to 45 minutes, or until completely set.
  7. Cut into squares and serve with warm corn tortillas!
