Ingredients

  • Tbsp heinz balsamic vinegar 
  • oz athenos feta cheese crumbled traditional
  • Tbsp mint leaves fresh chopped
  • cloves garlic minced
  • cup lentils dry
  • Tbsp olive oil 
  • 0.3 cup onions red chopped
  • 0.8 cup pasilla peppers red chopped

Directions

  1. Place lentils in medium saucepan.
  2. Add enough water to pan to cover lentils by 2 inches. Cook on medium heat 30 min. or until lentils are tender; drain.
  3. Add peppers, onions and mint; mix lightly. Cover. Refrigerate several hours or until chilled.
  4. Combine oil, vinegar and garlic.
  5. Pour over lentil mixture; mix lightly.
  6. Add cheese; toss lightly.
