Ingredients

  • 0.5 cup almonds coarsely chopped
  • 1.5 tablespoons coconut chips dried toasted (such as Melissa's)
  •  gala apples cored peeled cut into 1/2-inch pieces
  •  apples i use 2 granny smith apples cored peeled cut into 1/2-inch pieces
  • tablespoon juice of lemon fresh
  • teaspoon lemon rind grated
  • teaspoons sugar

Directions

  1. Combine sugar, rind, juice, and apples in a large bowl. Stir in almonds and coconut. Cover and refrigerate 2 hours.
  2. Garnish with parsley, if desired.
