  • 0.5 cup almonds toasted chopped
  • 0.5 teaspoon baking soda 
  • 0.7 cup coconut or flaked
  • cups flour all-purpose
  • 10 ounce lemon curd 
  • cup butter unsalted
  • cup sugar white

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large mixing bowl cream the butter.
  3. Add the flour, sugar and baking soda.
  4. Mix until the mixture forms coarse crumbs
  5. Pat 2/3 of the mixture into the bottom of one 9x13 inch baking pan.
  6. Bake at 375 degrees F (190 degrees C) for 10 minutes.
  7. Remove and let cool slightly.
  8. Spread the lemon curd over the baked layer. To the remaining 1/3 of crumb mixture add the coconut and the almonds.
  9. Sprinkle over the top of the lemon curd.
  10. Lower oven temperature to 350 degrees F (175 degrees C).
  11. Bake bars for 25 minutes or until lightly browned.
