Ingredients

  • 0.5 cup carrots chopped
  • teaspoon chili powder to taste
  • 0.5 cup green beans fresh chopped
  • 0.3 cup juice of lemon fresh
  • teaspoon mustard seeds 
  • pinch salt to taste
  • tablespoon vegetable oil 
  • cups water 
  • cup rice long grain white

Directions

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the mustard seeds, and cook until they pop. Once the seeds have popped like popcorn, add the carrot and green beans.
  3. Sautee them for about 2 minutes, just to mingle the flavors.
  4. Pour in the water, and add the rice and lentils. Reduce the heat to low, cover, and simmer for 20 minutes, or until rice and lentils are tender. Stir in the lemon juice, and season with salt and chili powder.
  5. Let stand covered for 5 or 10 minutes before serving.
