Ingredients

  •  bay leaves 
  • tablespoons butter 
  • 29 ounce chicken broth light fat free canned
  • tablespoons parsley fresh minced
  • tablespoons juice of lemon 
  • teaspoon lemon zest grated
  • cups rice long grain uncooked
  • medium onion minced
  • tablespoons pinenuts toasted
  • servings salt and pepper

Directions

  1. In a large saucepan, cook onion in butter for 3 minutes; add rice, stirring to coat.
  2. Add broth, lemon juice, peel and bay leaf.
  3. Heat to a boil; reduce heat to low. Cover and cook 15 to 20 minutes or until liquid is absorbed.
  4. Remove from heat; let stand 5 minutes.
  5. Remove bay leaf, stir in parsley and nuts. Season to taste with salt and pepper.
