Ingredients

  • large eggs lightly beaten
  • 0.3 cup half-and-half fat-free
  • 0.5 cup granulated sugar 
  • tablespoons juice of lemon fresh
  • 0.5 teaspoon lemon rind grated
  • tablespoons butter light

Directions

  1. Combine first 3 ingredients in a small saucepan. Cook over medium heat until sugar dissolves, stirring constantly with a whisk.
  2. Add butter and lemon juice; cook over low heat, stirring constantly, just until mixture coats the back of a spoon (about 160).
  3. Remove from heat; stir in lemon rind.
  4. Serve at room temperature or chilled. (
