Ingredients

  • 0.3 cup cornstarch 
  • 11 ounces cream cheese softened
  • 1.3 cups granulated sugar divided ( use)
  • tablespoon juice of lemon fresh
  • teaspoons lemon zest 
  • 0.8 cup powdered sugar 
  • 0.5 teaspoon salt 
  • tablespoons butter unsalted
  • 1.3 cups water 
  • cups non-dairy whipped topping divided ( use)
  • drops food coloring yellow

Directions

  1. Combine 3/4 cup of the sugar, cornstarch and salt in a medium saucepan.
  2. Add water and whisk until smooth.
  3. Place over medium heat and cook, whisking almost constantly, until mixture begins to boil.
  4. Add remaining 1/2 cup granulated sugar and reduce heat. Cook and whisk for 2 minutes or until mixture thickens and boils.
  5. Remove from heat and whisk in butter, lemon zest and lemon juice.
  6. Let cool for one hour.Prepare filling
  7. Beat together 11 ounces cream cheese, powdered sugar and lemon juice. Fold in half of the whipped topping.
  8. Spread over bottom of baked pie shell.
  9. Spread lemon mixture over cream cheese mixture. Put remaining whipped topping in a freezer bag, snip of the corner and pipe dollops around the perimeter of the pie plate.
