Ingredients

  •  celery stalk thick sliced
  • 0.3 cup optional: dill fresh chopped
  • servings kosher salt freshly ground
  • medium leek white thick halved lengthwise sliced
  • halves optional: lemon (for serving)
  • cups chicken broth low-sodium
  • tablespoon olive oil 
  • 0.5 cup orzo pasta 
  • 12 ounces chicken thighs boneless skinless

Directions

  1. Heat oil in a large heavy pot over mediumheat.
  2. Add leek and celery and cook, stirringoften, until vegetables are soft, 5-8 minutes.
  3. Add chicken and broth; season with saltand pepper. Bring to a boil, cover, reduceheat, and simmer until chicken is cookedthrough, 15-20 minutes.
  4. Transfer chickento a plate.
  5. Let cool, then shred chicken intobite-size pieces.
  6. Meanwhile, return broth to a boil.
  7. Addorzo and cook until al dente, 8-10 minutes.
  8. Remove pot from heat. Stir in chickenand dill.
  9. Serve with lemon halves for squeezingover.
