  • slices optional: lemon thin
  • tablespoons juice of lemon 
  • teaspoon lemon zest shredded finely
  • tablespoons olive oil 
  • tablespoons parsley chopped
  • servings salt and pepper

Directions

  1. In a 5- to 6-quart pan over high heat, bring about 3 quarts water to a boil.
  2. Add beans. Stir occasionally until tender-crisp to bite, 4 to 5 minutes.
  3. Drain.
  4. In a large bowl, combine oil, lemon peel, lemon juice, parsley, and garlic.
  5. Add beans and mix to coat.
  6. Add salt and pepper to taste.
  7. Pour into a serving dish and garnish with lemon slices.
