Ingredients

  • 0.5 teaspoon ground mustard dry
  • tablespoons parsley fresh chopped
  •  spring onion thinly sliced
  • tablespoons juice of lemon 
  • 0.3 cup olive oil 
  • 0.3 teaspoon pepper freshly ground
  • pounds potatoes - remove skin red cut into eighths
  • 0.8 teaspoon salt

Directions

  1. Bring potatoes and salted cold water to cover to a boil in a large Dutch oven; boil 15 to 17 minutes or just until tender.
  2. Drain and let cool 5 minutes.
  3. Whisk together olive oil and next 4 ingredients in a large bowl.
  4. Add warm potatoes, green onions, and parsley; toss to coat.
  5. Serve at room temperature or chilled.
