  • tablespoon cooking oil 
  • cup carrots sliced
  • cup celery stalks sliced
  • 0.5 cup onion chopped
  •  garlic clove minced
  • cup lentils dried rinsed
  • 0.5 lb andouille smoked cooked sliced quartered
  • 4.5 oz mushrooms drained sliced
  • 0.3 teaspoon thyme leaves dried
  • 0.3 teaspoon pepper 
  • cup water 
  • 28 oz chicken broth canned

Directions

  1. Heat oil in large saucepan or Dutch oven over medium-high heat until hot.
  2. Add carrots, celery, onion and garlic; cook 3 to 4 minutes or until vegetables are crisp-tender, stirring frequently.
  3. Add all remaining ingredients. Bring to a boil. Reduce heat; cover and simmer 30 to 40 minutes or until lentils and vegetables are tender.
